The story begins in Constantinople, a city shaped by the sea and sustained by grain, wine, markets and food arriving from distant provinces. It continues through Cape Town, where the Cape became a provisioning station at the meeting point of ocean routes, bringing together Indian Ocean ingredients, spice and fire.
Arriving in Copenhagen, these influences are transformed through a contemporary Nordic lens, fermentation, seasonality, preservation and fire, allowing ingredients and techniques to travel, evolve and become something familiar but new.
The Table Between Seas is an evening about those journeys: what travels, what changes, and what remains. Two kitchens, four hands, and one table connecting different shores through food.
